good questions.
-
Because it's gone.
Some things will return with the seasons. Others won't. We'd rather make something at the right time than all the time.
-
We're working on it.
For now, we'd rather make less than rush.
-
Probably not.
Tuesday is looking pretty good.

At the moment, honey ships Australia-wide.
Kimchi is a little more particular. It likes to stay cold, so it's currently available for local pickup or delivery only.
We're hoping to change that one day very soon for refrigerated products.
-
We're starting with our website and soon a handful of local spots we'd happily spend our own Saturday mornings in.
If you know somewhere that feels like home for HOTTIE, we'd love to hear about it.
-
Because that's where the good stuff is.
We'd rather wait for peaches than pretend they're always at their best.

As close to home as we can.
Many of our ingredients come from our garden or local growers, while our honey comes from a family of beekeepers in Nebo, Queensland, who've been looking after bees for generations.
Everything else follows the same thinking. If we can source it well and close to home, we will.

That's fermentation saying hello.
Our products are alive and will continue changing over time. Flavour, aroma and texture can shift from batch to batch and even from week to week.
We wouldn't have it any other way. Keeping things spicy.

Open them.
Pass them around.
Put it on things you probably weren't planning to.
Then let us know what worked.

She can be dramatic sometimes (rightfully so). Not to worry. Gently warm in a bowl of hot water and watch the crystals slowly dissolve. As our honey is fermented and full of wonderful bacteria it’s advised not to microwave - lest we want to kill off our little gut loving buddies.
